Gallo Pinto

Angelica and Erica are sisters and they run the Bumpy Road Cafe - we'd like to thank them for giving us the recipe for this dish.
Recipe for Gallo Pinto:
  • 2 cups cooked rice
  • 2 cups cooked black beans
  • ½ cup black bean stock (soup)
  • ½ onion and 1 bell pepper, chopped
  • 2 garlic cloves, chopped
  • 2 tbsp. fresh coriander, chopped
  • 2 tbsp. vegetable oil
Fry onion and bell pepper in veggie oil, add the garlic. Pour in the beans and the stock, bring to a boil, taking care that it does not dry out. Add the rice and stir gently - you don't want to mash the beans! Just before serving, stir in the fresh coriander. Provecho!
