A man stands in his front yard in Guatemala, surrounded by coffee beans drying in the sun. After the beans are harvested and the peel removed, they are dried either outside, or in large ovens. The peels are left in piles to rot - the day we rode through coffee country in Guatemala the air was thick with this sweet, acrid smell.
